Garlic Mushroom Chicken

As you all know I have been working with Mazola® Corn Oil for almost a year now and I have had so much fun cooking and eating all the delicious food I've made. Which is a testament to how easy it is to cook with Mazola ® Corn Oil because y'all know I do not like cooking. I am a big fan of anything that can be made in under 30 mins and that can be versatile. Today, I give you all this delicious creation. I absolutely love mushrooms and growing up we did not really have much of them. I had this chicken three different ways, with rice, with potatoes, and with mushroom raviolis. 

I wanted to try this out and even my mom approved. We get shamed because we “fry” our dishes and because people think there aren’t enough veggies. Including heart-healthy* Mazola ® Corn Oil in your favorite recipes is an easy way of making any dish delicious. Because of its high smoke point of 450 degrees, you don't have to worry about it decomposing and evaporating, and you don't have to use a lot of it. A small amount goes a long way! And not to mention this dish is loaded with nutrition (like many of our dishes). Bell peppers, mushrooms, white and green onions, all add to the dish with vitamins and minerals but also color and flavor. 

This dish is a complete meal which again many of us don't realize, it's got the protein, the veggies and we can add a carb three ways. When you think of positive nutrition, think whether or not your dish has these three components, if it doesn't ( add what's missing) BUT add something that actually will elevate your dish and goes with it. Don’t add kale just for the sake of it!

Garlic Mushroom Chicken


1. 4 Boneless, skinless chicken breasts  

2. ½ tsps garlic salt 

3. ½ tsps dried oregano 

4. ½ tsps paprika 

5. Salt and pepper 

6. 2 tbsp Mazola® Corn Oil, divided  

7. 1 cup White mushrooms  

8. ½ cup white onion 

9. ½ cup red bell pepper 

10. 1 tbsp garlic 

11. Fresh cilantro 

12. Fresh green onion 

13. 1/4 broth (your choice, I use bone broth). 


Cook the chicken: Pat chicken breast dry, season chicken with spices and let marinate for a few minutes 


1. Heat the 1 tbsp of Mazola ® Corn Oil in a skillet, add chicken. Cook until browned on both sides. Remove the chicken and place on a plate for later. 


2. Heat 1 tbsp of Mazola ® Corn Oil in the same pan saute  onions and bell pepper for 5 mins  


3. Add mushrooms, then cook until they are brown 


4. Add garlic for aroma and cook until fragrant 


5. Add chicken and broth, let it simmer for 5 mins or until desired sauce texture. 


6. Remove from heat and serve with rice or roasted potatoes, garnish with onions and cilantro, add an aguacate if desired.
